- 1 ⅓ cups milk
- 1 Vanilla bean (halved lengthways)
- ¼ cup sugar
- ½ cup Semolina
- 2 egg yolks
- 1 egg white (beaten)
- 2 Tbsps Poppy seeds
- For the compote
- 1 organic lemon (half juiced; zest grated)
- ¼ cup sugar
- 2 ⅔ cups Plum (halved and pitted)

Preparation steps

Place the milk and the vanilla pod in a pot and bring to the boil. Remove from the heat and leave to steep for 15 min. Remove the vanilla pod from the milk, add the sugar, bring back to the boil and add the semolina. Stirring continuously allow the mixture to rise up, then pour into a bowl and stir in the egg yolks. Carefully fold in the egg white and the poppy seeds. Pour the pudding into the moulds and chill for at least 4 hours.

Mix together the lemon juice, sugar and 3-4 tbsp water and bring to the boil. Stir in the plums and leave to cool.

Knock the puddings out onto plates and serve with compote. Garnish with lemon zest.
