- 3 tsps Powdered gelatine
- 3 Tbsps water
- 2 cups Soy milk
- 1 tsp vanilla extract
- ⅛ cup caster sugar
- For the redcurrant sauce
- 2 cups Red currant
- ½ cup water
- ¼ cup sugar
- 1 lemon (juice)
- To decorate

Preparation steps
1.
Sprinkle the gelatine onto the water in a small bowl and soak for 5 minutes.

Heat the soya milk and sugar in a pan and bring to a boil, stirring. Remove from the heat, stir in the vanilla and cool for a few minutes.

Stir in the gelatine and cool for 10 minutes. Pour into 4 ramekins or moulds. Cover and chill for about 2 hours until set.

For the redcurrant sauce: put the redurrants, water, sugar and lemon juice in a pan. Heat gently until the sugar has dissolved. Increase the heat slightly and cook for 5-10 minutes until the redcurrants are very soft.
5.
Mash or puree the mixture in a blender, then push through a sieve to remove the seeds.
6.
Turn out the panna cotta onto serving plates. Spoon the sauce over the top and decorate with redcurrants.
