- 9 ozs firm Pear
- ½ lemon (juice)
- 1 cup butter
- 1 cup sugar
- 2 ¾ cups gluten-free self-rising flour
- 2 tsps gluten-free Baking powder
- 2 Tbsps Poppy seeds
- 4 large eggs
- 1 Tbsp milk
- To decorate
- lingonberry Jam

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a deep 30cm x 23cm|12" x 9" baking tin and line the base with non-stick baking paper.

Peel, core and slice the pears and toss in the lemon juice. Set aside.

Put the remaining ingredients in a mixing bowl and whisk with an electric whisk for about 2 minutes Alternatively, beat with a wooden spoon for about 3 minutes until smooth and light.
4.
Spoon into the tin and spread evenly. Lay the pear slices evenly on top and press them lightly into the mixture.
5.
Bake for 40-50 minutes until risen and golden brown. Cool in the tin for 10 minutes, then place on a wire rack to cool completely. Cut into pieces and top each piece with a spoonful of lingonberry jam.
