- 2 Tbsps olive oil
- 4 Tbsps butter
- 2 shallots (thinly sliced)
- 7 ½ cups mixed Wild mushroom (cut into pieces)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- ¼ cup Madeira
- 3 Tbsps finely chopped parsley
- ¼ cup grated Parmesan
- 0.333 cup Blue cheese (crumbled)
Preparation steps

Heat oil with 2 tablespoons butter in a large skillet over medium-high heat. Add shallots to pan and cook until soft, about 2 minutes. Add mushrooms and cook, stirring occasionally, until golden brown,

about 8 minutes. Season with salt and pepper.

Add the Madeira and parsley and cook until the liquid has evaporated, about 3 minutes.

Stir remaining 2 tablespoons butter and Parmesan into polenta and spoon onto individual serving plates. Top the polenta with mushrooms and blue cheese. Serve immediately.
