4 Tbsps Mayonnaise
cup cream cheese
½ bunch Dill (chopped, tips retained)
2 gherkins (diced)
2 Tbsps Pickle juice
lemon zest (as required)
cup smoked Salmon (diced)
1 cup Smoked trout (flaked with a fork)
1 unwaxed lemon (thinly sliced)

Preparation steps

1.
Mix together the mayonnaise, cream cheese, dill, gherkins and the gherkin water and season with salt, ground black pepper and the lemon zest if desired.
2.
Place a tbsp of the cream into four glasses and place some of the fish on top. Repeat and finish with a layer of cream. Garnish with the dill tips and a slice of lemon and serve immediately.
