Creamy Fish Appetisers with Dill

- 4 Tbsps Mayonnaise
- ⅞ cup cream cheese
- ½ bunch Dill (chopped, tips retained)
- 2 gherkins (diced)
- 2 Tbsps Pickle juice
- lemon zest (as required)
- ⅔ cup smoked Salmon (diced)
- 1 cup Smoked trout (flaked with a fork)
- 1 unwaxed lemon (thinly sliced)

Mix together the mayonnaise, cream cheese, dill, gherkins and the gherkin water and season with salt, ground black pepper and the lemon zest if desired.
Place a tbsp of the cream into four glasses and place some of the fish on top. Repeat and finish with a layer of cream. Garnish with the dill tips and a slice of lemon and serve immediately.
