2 Limes
½ bunch fresh cilantro

Preparation steps

1.

Rinse, trim and chop white and light green parts of scallion. Reserve green top for garnish. Rinse chiles, slit lengthwise, remove seeds and dice. Halve avocados and remove pits. Scoop out flesh. Halve lime and squeeze juice.

Rinse cilantro, shake dry, strip leaves from stems and finely chop. In a blender, combine avocado, scallion, chile, lime juice and cilantro and puree until smooth. Season with salt and pepper. If desired, garnish with sliced scallion green. Serve with chips.
