This is a well rounded meal, complete with vegetables, bread, cheese, which provides vitamins and minerals, fiber and carbs, and calcium and fats. This will fill you up and leave you energized throughout the day. 

You can add an egg and some bacon or sausage to make this a breakfast sausage with extra protein.

1 red chili pepper
1 cup cream cheese
2 Tbsps fresh lemon juice (divided)
1 Tbsp fresh Chives (finely chopped)
salt (to taste)
freshly ground Black pepper (to taste)
2 ripe Avocados
butter (for brushing)
4 sesame Bagel (split in half)
2 scallions (washed and cut into thin strips)
1 handful fresh Sorrel (washed and shaken dry)

Preparation steps

1.
Wash and trim the chili pepper and finely chop. Set aside.
2.
In a small bowl, mix the cream cheese with 1 tablespoon lemon juice, stirring until smooth and creamy. Add the chopped chili pepper, chives, salt and pepper.
3.
Cut avocados in half and remove the stone. Using a spoon, gently remove the flesh from the peel and cut into thin slices. Sprinkle slices with remaining lemon juice and season with salt and pepper.
4.
Brush the cut side of the bagels with butter and grill in a hot skillet until golden.
5.
Spread the cream cheese mixture on the bottom half of the bagel. Divide avocado slices, green onion strips and sorrel between bagels and top remaining bagel halves. Serve.
