- 21 ozs Tuna (cut into cubes)
- fresh ginger (peeled and grated)
- 2 Tbsps olive oil
- 1 Orange (zest and juice)
- 2 Tbsps honey
- For the couscous
- 3 Tbsps raisins
- 1 Orange (zest and juice)
- 1 ⅓ cups Couscous
- 1 carrot (peeled and grated)
- 2 Tbsps olive oil
- 3 Tbsps sliced almonds (toasted)
- 3 sprigs parsley (roughly chopped)
- Oranges (to garnish)

Preparation steps
1.
Mix the tuna with the ginger, oil, orange juice and zest and the honey. Set aside to marinate in the refrigerator for 30 minutes.

Meanwhile, mix the raisins with the orange juice and zest and set aside.
3.
Cook the couscous according to the package instructions.
4.
Fluff the couscous up with a fork then mix in the soaked raisins, carrot, olive oil, almonds and parsley. Season with salt and pepper and set aside.
5.
Heat an oiled griddle pan or grill (broiler). Thread the tuna cubes onto wooden skewers, reserving the marinade.
6.
Cook the fish skewers for 5-6 minutes, turning frequently, or until the fish is just cooked through. Place the skewers on serving plate with the couscous alongside.
7.
Place the marinade in small pan, bring to a boil then drizzle over the skewers. Serve garnished with the orange slices.
