300 grams Couscous (Instant)
400 milliliters Vegetable broth
2 Tomatoes
1 red onion
½ Cucumber
1 red Bell pepper
2 Tbsps freshly chopped Peppermint
2 Tbsps freshly chopped parsley
1 lemon (juiced)
4 Tbsps olive oil
salt
freshly ground peppers

Preparation steps

Bring the broth to a boil. Add the couscous to a boil, and cover with the broth. Let soak for 10-15 minutes. Fluff with a fork and let cool.

Rinse the tomatoes, remove the core, and cut into 0.5 cm (approximately 1/4 inch) cubes. Peel and finely dice the onion. Rinse and quarter the cucumber and peppers. Remove the seeds from both, then cut into 0.5 cm (approximately 1/4 inch) cubes. 

3.

Mix the couscous with the prepared vegetables, chopped herbs, lemon juice, and olive oil in a large well. Mix well, season to taste with salt and pepper, and serve.
