100 grams red Quinoa
100 grams white Quinoa
50 grams black Quinoa
salt
2 Red onions
2 scallions
½ Cucumber
1 lemon
5 sprigs flat-leaf parsley
5 sprigs mint
30 milliliters olive oil
salt
freshly ground peppers

Preparation steps

Rinse quinoa in sieve. Add quinoa to about 500 ml (approximately 2 cups) boiling salted water, reduce heat, cover and cook at low temperature for about 12 minutes. Remove from heat and let swell another 10 minutes. Set aside and let cool.

Meanwhile, peel and dice red onion. Rinse scallions and cut into small rolls. Peel and dice cucumber. Rinse and dry lemon and use zester to remove fine stripes of lemon peel. Squeeze out lemon juice. Rinse herbs, shake dry and chop. Mix all prepared ingredients with olive oil. Season tabbouleh with salt and pepper and serve.
