1 can drained Corn (340 grams)
4 stalks green Asparagus (blanched and drained)
1 Tbsp diced shallot (sautéd until translucent)
2 eggs
2 Tbsps Whipped cream
2 Tbsps Pastry flour
2 Tbsps Cornmeal
1 tsp salt
white, freshly ground peppers
vegetable oil (for frying)
2 Tbsps Whipped cream (for garnish)

Preparation steps

1.

Drain the corn well in a colander. Dice the asparagus.

Mix eggs with salt, pepper and cream. Add flour and cornmeal and stir until smooth. Stir in the corn, shallots and asparagus and let the batter rest for about 5 to 10 minutes.

Heat the oil in a pan. Spoon the corn batter into the hot oil and sauté until golden brown on both sides.

Serve with sour cream and chili sauce if desired.
