2 Tbsps finely chopped cilantro
2 green chili peppers (finely chopped)
3 tsps Rice flour
3 tsps Pastry flour
salt
vegetable oil (for sautéing)

Preparation steps

1.

Drain corn well and mix with chilies, rice flour, flour, a little salt and a little water to form a sticky mass. Divide the mixture into large pieces.

2.

Heat the oil in a deep saucepan to 350°F on a candy thermometer. Working in batches, gently drop the dough into the oil and cook until golden brown. Drain on paper towels. Serve with green chutney.
