Corn and Bell Pepper Salad with Cheese
Rinse the bell peppers, trim, remove seeds and ribs, and cut into thin rings. Drain the corn kernels. Dice both the cheese. Peel the onions and cut into thin rings. Mix the bell peppers, corn kernels, both the cheese and onion rings together.
Mix the herb vinegar with oil, and season with salt and pepper to form a vinaigrette. Drizzle the vinaigrette over the salad.
Rinse the chives, cut into rings and sprinkle over the salad. Serve immediately.
