1 redfish fillet (700 g)
½ bunch cilantro
3 garlic cloves
1 pc ginger (about 8 cm long)
1 Tbsp Sambal oelek
1 tsp Turmeric
3 Tbsps soy sauce
3 Tbsps Canola oil
salt
2 Banana leaf
2 Limes

Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Wash the fish fillet, pat dry and cut into 8 equal pieces. Wash the cilantro, shake dry and chop. Peel the garlic and half the ginger, chop finely and mix with the Sambal oelek, the cilantro, the turmeric, the soy sauce, the canola oil and the salt. Brush the mixture on all sides of the fish and marinate for 1 to 2 hours.

Wash the banana leaves wash, trim into 24 x 24 cm (approximately 10 x 10 inch) squares. Place a piece of fish on top of each. Wash the limes and cut into thin slices. Peel the rest of the ginger and cut into thin slices. Place 2 slices of lime and 2 slices of ginger on each fish. Fold the leaves into a packet and sealed with a wooden skewer. Bake in preheated oven for 15 to 20 minutes. Serve with the leaf pack open on a plate.
