Ingredients

For the fish
600 grams fish fillets (e.g., cod, haddock, perch)
salt
freshly ground peppers
juice of lemons
8 Banana leaf (from Asian food store)
For the sauce
1 Tbsp sugar
100 milliliters Rice wine vinegar
1 garlic clove (pressed)
2 Tbsps mint (chopped)
2 Tbsps cilantro (chopped)
2 Red chili peppers (seeded and finely chopped)
salt
freshly ground peppers

Preparation steps

To make the sauce, mix all the sauce ingredients well.

To make the fish, blanch the banana leaves in boiling salted water for 3–4 minutes. Rinse and drain. Trim the leaves into rectangles about 20x30 cm (approximately 8x12 inches) in size.

Divide the fish into 8 pieces, season with salt and pepper, and sprinkle with lemon juice. Lay 1 piece of fish on each banana leaf. Then fold up each leaf to enclose the fish, and seal the parcels with wooden skewers. Place parcels on a steamer in a large pot of simmering water for about 30 minutes.
