2 garlic cloves
1 chili pepper
150 grams Peanuts (unsalted)
1 tsp freshly grated ginger
1 tsp brown sugar
1 Tbsp Fish sauce
2 Tbsps Peanut oil
2 Tbsps freshly chopped cilantro
4 Sea bass fillet (each about 140 grams)
1 large Banana leaf (or parchment paper)
6 Kaffir Lime leaves

Preparation steps

1.

Peel garlic and chop finely. Rinse and finely chop the chile pepper. Chop the peanuts and mix with the garlic, chile, ginger, sugar, fish sauce, peanut oil and cilantro.

Rinse the banana leaf, pat dry and cut into quarters. Rinse the fish fillets, pat dry and cut in half. Place a one-half piece of fish on each piece of banana leaf. Spread each piece of fish with the peanut cilantro mixture. Top with another piece of fish. Close up the banana leaf packets, using kitchen twine if necessary. Place the banana-leaf packets in a bamboo steamer and steam, until fish is cooked, about 10 minutes.

Cut the kaffir lime leaves into very fine strips. Open the packet and garnish with the lime leaves and strips of lime zest.

Serve with cauliflower purée, if desired.
