120 grams blanched almonds
2 egg whites
1 tsp lemon juice
150 grams powdered sugar
1 pinch Cardamom

125 grams Whipped cream
100 grams Dark chocolate
1 tsp Coffee (Instant)
1 Tbsp softened butter

Preparation steps

1.

For the macarons, preheat the oven to 150°C (approximately 300°F). Line two baking sheets with parchment paper and sprinkle with a little instant coffee.

Grind almonds in blender until very fine. Beat the egg whites with the lemon juice until stiff, gradually sprinkling in the powdered sugar and the cardamom. Beat until stiff and very glossy, then carefully fold in the almonds.

Place mixture in a piping bag with a large, round spout and pipe about 60 portions onto a baking sheet lined with parchment paper. Let dry about 1 hour. Then bake in the oven for 10-12 minutes. Carefully remove from baking sheet and let cool.

For the filling, warm the cream and add the coarsely chopped chocolate. Stir until melted. Stir in coffee and butter, beating until creamy.

5.

Spread filling on bottom surfaces of half of the macarons. Place a second macaron on top, pressing lightly. Let cool about 1 hour before serving.
