- 1 bunch scallions
- 100 milliliters white wine
- 200 milliliters fish stock
- 1 chili pepper
- 100 milliliters Coconut milk
- Light soy sauce
- cayenne pepper
- lemon juice
- cilantro (for garnishing)

Preparation steps

Rinse cod, pat dry and cut into bite-sized pieces. Rinse and dry scallions, cut diagonally into 2 cm (approximately 3/4 inch) long pieces. Heat up white wine with 100 ml (approximately 2/5 cup) of fish stock, but do not boil.

Add fish and scallions to the broth and poach, covered, for about 5 minutes on low heat. Combine remaining stock with coconut milk and add chopped chile pepper, bring to a boil.

Season sauce with soy sauce, cayenne pepper and lemon juice and whisk until frothy. Remove fish and scallions from broth and arrange on warmed plates. Drizzle with sauce and garnish with cilantro leaves. Serve.
