- 2 Tbsps Caper
- 1 shallot
- 2 fresh garlic cloves
- 1 handful parsley
- ½ organic lemon (juiced and zested)
- 4 Cod (ready to cook, each about 180 grams)

Preparation steps

Drain sun dried tomatoes, finely chop drained capers. Peel shallot and garlic, dice both finely. Rinse parsley, shake dry and pluck off leaves, chop. Combine all prepared ingredients with lemon zest.

Preheat the oven to 180 ° C convection.

Rinse fish, pat dry and place each on a sufficiently large piece of parchment paper. Season on both sides with salt and pepper and drizzle with lemon juice. Spread tomato and caper mixture on it, season with salt and pepper and fold paper, seal well. Arrange on a baking sheet and bake in preheated oven at 180°C (approximately 350°F) for about 15-20 minutes. Arrange on plates and open carefully, serve.
