400 grams Spaghetti
300 grams Tomatoes
100 grams green Olives (pitted)
100 grams cooked Pancetta
4 Tbsps olive oil
2 garlic cloves
salt
freshly ground peppers
thyme (4 small)
rosemary (4 small)
4 large Parchment paper sheets (folded)

Preparation steps

1.

Cook spaghetti in plenty of boiling salted water until al dente, drain and rinse with cold water.

Cut olives into slices.

Cut bacon into thin strips, then sauté in 1 tablespoon hot oil. Stir in tomatoes, simmer for 15 minutes then mash with a potato masher if necessary. Stir in olives and pressed garlic and season with salt and pepper.

Mix spaghetti with sauce.

Brush parchment paper with remaining oil. divide spaghetti into 4 portions and place one in middle of each sheets. In each, place 1 sprig of thyme and rosemary, fold paper, crease edges firmly and place on a lined baking sheet. Bake in preheated oven at 180°C (approximately 350°F) for about 20 minutes cook. Serve parcels on plates.
