4 cups Beef fillet (trimmed and diced evenly into large chunks)
2 large carrots (peeled and sliced)
4 small Turnip (roughly chopped)
1 small Leek

Preparation steps

1.
Pre-heat the oven to 190°C | 375F | gas 5. Discard the green part of the leek and finely slice the white part.
2.
Cut 4 pieces of 10 inch x 6 inch rectangles of wax paper. Fold the pieces of paper in half, bringing the top side of the paper down and over.
3.
Open the paper back out again and place a mixture of the beef, carrot, leek and turnip scattered on the bottom half of the paper, towards where the fold was made. Drizzle the olive oil and some seasoning on top.

Bring the top part of the paper back over, as you did when you made the first fold; this should enclose the ingredients.
5.
Fold the bottom edges of the paper back over themselves to create a 1 inch border along the bottom.
6.
Fold the left and right sides back in over the paper by roughly an inch towards the centre.
7.
Seal the side and bottom borders together by sewing kitchen string through them to secure. Carefully sit the paper on a baking tray.
8.
Bake for 15-20 minutes until the vegetables are tender and the beef is cooked.
9.
Remove from the oven and carefully cut away the pocket of paper to reveal the ingredients. Garnish with the chopped chives before serving.
