- For the base
- 1 ⅓ cups butter Cookie
- ⅔ cup Almond flour
- 2 Tbsps brown sugar
- ⅔ cup melted butter
- For the lemon cream
- 3 unwaxed lemons (juiced, zest grated)
- 2 Limes (juiced)
- ⅓ cup butter
- 1 cup sugar (scant)
- 3 eggs (beaten)
- 1 cup Blueberries (to garnish)

Preparation steps
1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.

Grind the biscuits to fine crumbs in a food mixer. Place in a bowl with the almonds, sugar and the butter and mix well. Divide between the tartlet dishes and press firmly on the bottom and around the edges.

Bake the tartlets for around 15 minutes until golden brown. Remove from the oven and leave to cool.

To make the cream, sieve the lemon and lime juice. Place the butter in a bain-marie with the sugar, lemon zest and the citrus juice. Stir continuously until the butter had melted.
5.
Gradually add the beaten eggs, stir in well and continue stirring until the mixture is creamy. Pour the cream into the tartlet bases and top with blueberries.
