1 ¾ cups fresh Ricotta cheese
1 cup low-fat Quark
2 tsps grated Lemon peel
2 Tbsps lemon juice
1 Tbsp clear honey
2 ½ cups Raspberries
2 Tbsps raisins
1 Tbsp cane sugar
2 Tbsps sliced almonds
lemon zest (to garnish)

Preparation steps

1.
Mix the ricotta with the quark, 1 tbsp lemon juice, the grated lemon peel and honey and fold in the raisins. Cover and put into the refrigerator.
2.
Sort the raspberries and mix with the sugar and the rest of the lemon juice. Toast the almonds in a dry frying pan.
3.
Spoon the ricotta cream into bowls, scatter with raspberries, flaked almonds and lemon zest and serve.
