- 1 cup butter 150g (2/3 cup) cup melted and 100g (1/3 cup) diced
- For the filling
- 4 Tbsps clear honey
- 7 Tbsps Corn starch
- 6 large Limes (zest and juice of 5)
- 6 egg yolks
- 1 cup double cream (48% fat)

Preparation steps
1.
Heat the oven to 160°C/140°C fan/325°F/gas 3.

Put the biscuits into a food processor and blend to fine crumbs. Pour in the melted butter and mix briefly using the pulse button. Press the mixture over the bottom and sides of a 22cm pie plate or tart tin. Bake in the oven for 10 minutes. Remove and cool.

To make the filling mix together the honey and cornflour to form a smooth paste. Put 3 tbsp water and the lime zest and juice into a pan. Bring to the boil. Gradually pour the hot liquid onto the cornflour whisking all the time.

Beat in the egg yolks and the remaining butter. Return to the pan and cook over a very low heat stirring all the time until thickened. Pour into the pie dish and chill.
5.
Whisk the cream until thick and then spoon or pipe onto the pie. Slice the remaining lime and use to decorate the pie.
