- 1 cup caster sugar
- 2 Tbsps Corn starch
- 1 cup fresh Orange juice
- ⅔ cup water
- ¾ cup unsalted butter (cubed)
- 6 medium egg yolks
- 2 medium eggs
- 4 ready-made Tartlet crusts
- 2 Tbsps powdered sugar

These tartlets can be chilled ahead of time. Garnish and glaze with a blowtorch just before serving.
Preparation steps
1.
Pare the zest from the orange and julienne. Segment the oranges into a bowl, cover, and chill until needed.
2.
Combine the sugar, cornflour, orange juice, and water in a saucepan and cook over a low heat until bubbling.
3.
Remove from the heat and beat in the butter, one cube at a time, until incorporated. Beat in the egg yolks and eggs.
4.
Cook over a low heat, stirring, for a few minutes until the curd is of dropping consistency.
5.
Fill the tartlet cases with the curd and top with icing sugar, orange segments, and julienned zest.
6.
Glaze with a chef's blowtorch before serving.
