1 Roast chicken (approx. 1.4 kg, cut into 8 pieces)
2 Tbsps olive oil
2 organic lemons (chopped)
3 Tbsps black Olives (jar, drained)
1 Tbsp Caper (jar, drained)
1 bunch flat-leaf parsley (leaves finely chopped)
cup dry white wine

Preparation steps

Season the chicken pieces with salt and ground black pepper. Heat the oil in a pan and fry the chicken pieces until golden-brown on all sides.
2.
Add the lemons, olives and capers. Pour in the wine and stir to deglaze the pan. Cover and simmer over a medium heat for approx. 20-25 minutes.
3.
Sprinkle with parsley and serve at once.
