3 egg whites
1 pinch sugar
450 grams ground almonds
1 tsp cinnamon
1 pinch ground cloves
1 Tbsp Red currant jelly
Parchment paper (for the baking sheet)

Preparation steps

1.

Beat the egg whites with a pinch of salt until stiff. Sprinkle in the sugar and continue beating until the mixture shines.

Set aside 5 tablespoons of the egg white mixture for the glaze. Mix the almonds, spices and currant jelly. Fold the almond mixture into the egg whites and knead into a smooth dough.

Preheat the oven to 150°C (approximately 300°F). Line the baking sheet with parchment paper. Roll out the dough between two layers of plastic wrap until 5 mm (approximately 1/4 inch) thick. Use cookie cutters to cut out stars and moons. Place the cookies on the baking sheet. Spread the egg white glaze on the cookies.

Bake for about 15 minutes. Remove from the oven, let cool and serve.
