- 150 grams Dark chocolate
- 150 grams Milk chocolate
- 1 sm cup strong Espresso
- 5 eggs
- 3 Tbsps Vanilla sugar
- 125 grams chilled Whipped cream
- 50 grams sugar
- 8 Ladyfinger
- 8 Tbsps Chocolate liqueur
- also
- 3 Tbsps Chocolate
- 150 grams whipped Whipped cream
- 8 Meringue biscuits (for garnish)
Preparation steps
1.
Chop chocolate coarsely. Combine chocolate and espresso in a metal bowl. Place bowl over a pan of simmering water and stir until melted. Remove from heat.

Separate eggs. Beat egg yolks with vanilla sugar until sugar is well incorporated and mixture is light. Beat chilled cream until stiff.

Whisk egg whites with sugar until stiff peaks form.

Whisk egg yolk mixture into melted chocolate. Quickly whisk in whipped cream before mixture solidifies.
5.
Gently fold in egg whites. Crumble ladyfingers into the bottoms of dessert glasses and drizzle with chocolate syrup. Spoon mousse on top. Cover and refrigerate at least 3 hours.
6.
To serve, garnish with whipped cream, chocolate shavings and meringue cookies.
