- 4 Sea bass (gutted, heads removed and scaled)
- 3 sunflower oil
- walnut-sized ginger (peeled and shredded into matchsticks)
- 3 garlic cloves (crushed)
- 2 red chili peppers (deseeded and thinly shredded)
- 1 red pepper (deseeded and sliced into fine strips)
- 1 yellow pepper (deseeded and sliced into fine strips)
- 6 scallions (cut into fine strips)
- 1 light soy sauce
- To garnish
- 1 lemon (cut into wedges)

Preparation steps
1.
Slash the fish skin a few times and season with salt and ground black pepper. Heat a heavy-based skillet and add 1 tbsp oil.
2.
Fry the fish for 5 minutes or until the skin is very crisp and golden. Turn over, cook for another 5 minutes, or until the fish is cooked through.
3.
Heat the remaining oil in another pan then fry the ginger, garlic and chillies and peppers for a few minutes until softened. Take off the heat and toss in the scallions (spring onions).
4.
Splash the fish with a little soy sauce and serve topped with the pepper mixture, garnished with lemon wedges.
