- 2 Peaches (pitted and roughly chopped)
- 1 ½ inches fresh ginger (peeled and roughly chopped)
- 2 cloves garlic cloves (peeled and chopped)
- 1 tsp soy sauce
- 1 tsp Worcestershire sauce
- 2 tsps olive oil
- 4 boneless Chicken breasts (cut in bite-size pieces)
- 1 red pepper (cut into bite-size pieces)
- 1 yellow pepper (cut into bite-size pieces)
Preparation steps

Place the peaches, ginger, garlic, soy sauce, Worcestershire sauce and olive oil into a small blender and pulse until completely smooth.

Place the pieces of chicken and pepper into a non-metallic bowl and add the peach marinade. Toss until well mixed. Leave to marinate for at least one hour in the refrigerator.

Thread the pieces of chicken and peppers onto metal skewers and cook under a grill or over the barbecue for 18-20 minutes, turning frequently, until the chicken is cooked through. Serve on a bed of couscous or rice.
