250 grams Rice noodles
300 grams Snow peas

1 Red chili pepper
4 Radish
2 scallions
1 garlic clove
2 centimeters fresh ginger
350 grams Chicken breasts
2 Tbsps soy sauce
1 Tbsp cornstarch
3 Tbsps Peanut oil
80 milliliters Chicken broth
2 Tbsps bright Fish sauce
cayenne pepper

Preparation steps

Cook pasta according to instructions on package. Drain.

Rinse, trim and blanch snow peas in salted water for 1 minute. Rinse and drain well. Rinse chile pepper, trim and cut into rings. Rinse radishes, trim and slice. Rinse and trim spring onions and cut lengthwise into 8 cm (approximately 3 inch) thin strips. Peel and finely chop garlic and ginger.

Rinse chicken, pat dry and cut into strips. Drizzle with soy sauce and mix with cornstarch. In hot wok fry in oil until golden brown. Add garlic, ginger and chile peppers and fry briefly. Stir in snow peas, radishes and green onions and cook together for 1-2 minutes. Add broth and season with fish sauce, salt and cayenne pepper. Serve in bowls with pasta.
