1 egg white
2 tsps Corn starch
4 boneless, skinless Chicken breasts
2 Tbsps Peanut oil
1 Tbsp black Sesame seeds
2 tsps dark soy sauce
2 tsps Cider vinegar
2 tsps Chili bean paste
2 tsps sesame oil
2 tsps sugar
1 Tbsp Rice wine (or dry sherry)
4 scallions (roughly chopped)
1 red pepper (deseeded and sliced)
1.333 cups sweet Corn (roughly cut into chunks)
4 Tbsps Cashews

Preparation steps

1.
Mix together the egg white and corn starch with 1/2 tsp salt.
2.
Add the chicken and stir to coat. Chill for 15 minutes.
3.
Meanwhile, add 1 tbsp peanut oil to a skillet, heat and add the sesame seeds. Stir-fry for 30 seconds until golden.
4.
Stir in the soy sauce, cider vinegar, chilli bean sauce, sesame oil, sugar and rice wine or sherry. Bring to the boil, then turn off the heat.
5.
Bring 1 1/2 cups water to the boil in a skillet. Add the chicken and cook for 4 minutes. Discard the water.
6.
Add the cooked chicken to the sauce and warm through.
7.
Heat the remaining peanut oil in the skillet. Tip in the scallions, red pepper, corn and cashew nuts and stir fry for a few minutes.
8.
Divide the vegetables and nuts between 4 bowls. Cut each chicken breast into 5 slices. Arrange a chicken breast on top of the vegetables and drizzle over the sesame seed sauce.
