Chicken, Lamb and Rocket Sandwiches

Prepare two griddle pans with hot oil. Fry the lamb in one pan for 1-2 minutes on each side, and the chicken in the other pan for around 3 minutes on each side. Season with salt and ground black pepper.
Cut the rolls and spread with mayonnaise. Fill with the lettuce, then put chicken in two of the sandwiches and lamb in the other two. Add sliced eggs to the chicken baguette and peppers to the lamb baguette.
Secure the sandwiches with cocktail sticks and wrap in sandwich paper.
