1 Chicken breast (about 300 grams)

1 Tbsp clarified butter
3 hardboiled eggs
12 slices Italian Sandwich bread
1 bunch Cress
butter (For painting)

Preparation steps

1.

Heat the clarified butter in a skillet, season the chicken with salt and pepper and saute on both sides until cooked through, about 10 minutes. Let cool and cut diagonally into very thin slices. Peel the eggs and thinly slice.

2.

Cut the cress with scissors from the roots, place in a colander, rinse and drain. Thinly spread the butter on one side of each slice of bread. Top 2 slices of bread with chicken and about 1/4 of the cress and cover each with a slice of bread (buttered side down).

3.

Top 2 slices of bread with the egg and about 1/4 of the cress and cover each with a slice of bread.

4.

Top 2 slices of bread with the remaining watercress and cover each with a slice of bread.

5.

Lightly press down on the bread and halve diagonally.

6.

Arrange on 4 plates and serve.
