1 chicken (about 1.5 kg, in pieces)
2 garlic cloves (finely chopped)
1 Red onion (cut into wedges)
2 Oranges (1/2 orange zested)
2 Limes (1 zested)
ground cumin

30 grams butter
olive oil (cold-pressed)

1 fresh chili pepper (chopped)

Preparation steps

Mix chicken pieces with garlic, onions, orange zest, lime zest, a pinch of cumin and oregano, chopped chile pepper and salt to taste. Mix until well combined, cover and marinate at least 6 hours in the refrigerator.

Heat 2 tablespoons oil with the butter in a high-sided non-stick pan. Add drained chicken pieces and fry until golden-brown on all sides. Reduce the heat, cover and simmer, turning pieces occasionally, about 25 minutes. Transfer chicken to a large platter. Cut oranges and limes (including peel) into pieces. Pour remaining marinade into the pan and add the orange and lime pieces. Cook over high heat, 5-6 minutes. Pour mixture over chicken pieces and serve immediately.
