Ingredients
0.333 cup fresh Orange juice
1 Tbsp fresh Orange zest
2 Tbsps fresh lemon juice
1 Tbsp white wine vinegar
1 clove garlic cloves (pressed)
4 sprigs fresh thyme (leaves plucked)
1 pinch freshly ground Black pepper
2 tsps Dijon mustard
2 Tbsps toasted sesame oil (to taste)
2 whole, boneless and skinless Chicken breasts
1 Tbsp good-quality olive oil
1 large onion (peeled and thinly sliced)
6 carrots (peeled; trimmed and cut into bite-size strips)
3 cups fresh, yellow wax beans (trimmed and sliced)
salt (to taste)
1 Tbsp toasted Sesame seeds

Preparation steps

1.
In a glass bowl, combine orange juice, orange zest, lemon juice, vinegar, garlic, thyme leaves, pepper and mustard; whisk to blend. Slowly whisk in the sesame oil and set aside.
2.
Rinse the chicken under cold running water and pat dry with paper towels. Place chicken between two sheets of plastic wrap and pound with a meat mallet to a thickness of 1/2-inch. Cut chicken breasts in half.
3.
Place chicken and 1/2 of prepared vinaigrette in a resealable plastic storage bag. Gently squeeze the bag to thoroughly coat the chicken. Seal and marinate in the refrigerate for 1 to 2 hours.
4.
Heat a wok or skillet until very hot. Coat the onion, carrots, and beans with olive oil and season with salt and pepper. Grill vegetables until tender crisp.
5.
Remove chicken from marinade, and discard marinade. Grill the chicken until cooked through and browned on all sides.
6.
Arrange vegetables and chicken on a serving platter or in individual bowls. Sprinkle with sesame seeds and drizzle with remaining reserved vinaigrette.
