4 boneless, skinless Chicken breasts (halves)
2 Tbsps Dijon mustard
1 small onion (peeled and chopped)
1 Tbsp chopped, fresh parsley
½ cup packed brown sugar (divided)
2 cups Orange juice
2 Tbsps butter (chopped)
1 Orange (peeled and separated into segments)
2 Tbsps all-purpose flour

Preparation steps

1.
Preheat oven to 375º F / 190º C.

Place chicken in a baking dish. Spread mustard evenly over the chicken and sprinkle with chopped onion and parsley. Sprinkle lightly with half of the brown sugar and pour just enough orange juice to cover the chicken. Arrange chopped butter on top.

Bake in preheated oven for 45 minutes. Remove leftover sauce the from baking dish and pour into a saucepan. Sprinkle chicken with remaining brown sugar and arrange orange segments around chicken. Return to oven.
4.
Whisk flour into sauce in saucepan. Add leftover orange juice; heat on high until the sauce thickens. Remove chicken from oven; pour sauce over the chicken and serve.
