1 Mango
1 red chili pepper (chopped)
1 Tbsp honey
2 Tbsps soy sauce
1 tsp ginger (freshly grated)
2 Tbsps vegetable oil
mixed Lettuce (such as, arugula or Frisée)

Preparation steps

1.

Rinse the chicken breast fillets and pat dry.

2.

Mix the honey with soy sauce, chile and ginger and coat the chicken with it.

Peel the mango, cut the flesh from the stone and dice. Lay with the meat in a baking dish or roasting tin. Drizzle with a little oil and place in the oven to grill at 180°C (approximately 350ºF) for about 8 minutes. Then turn the mango and chicken breast and grill for another 8 minutes.

4.

Rinse the lettuce and shake dry. Pluck into small pieces and transfer to plates or bowls.

Serve the chicken breast with mango on top.
