Ingredients

For the salsa
1 Mango (peeled, flesh removed from stone and finely chopped)
1 Red onion (finely chopped)
1 Apple (finely chopped)
1 Lime (juice and finely grated zest)
2 Tbsps sweet Chili sauce
For the rice
1 cup Long grain rice
1 clove garlic cloves (crushed)
1 pepper (seeds removed and finely chopped)
4 scallions (chopped)
For the salmon
1 Tbsp olive oil
4 fresh Salmon fillet

Preparation steps

1.
Put the mango, onion, apple, lime zest and juice and sweet chilli sauce together in a bowl. Stir to mix. Cover and allow the flavours to mingle whilst preparing the rest of the dish.

Put the rice into a pan with 2 cups of water, a generous pinch of salt, the garlic, the pepper and the spring onions. Cover and simmer for 15 minutes until the rice is tender and the liquid absorbed.
3.
Brush the olive oil over the salmon fillets and season with salt and ground black pepper.
4.
Fry in non-stick skillet for 10 minutes, turning as needed.
5.
Spoon the rice onto plates, top with the salmon fillets and some mango salsa.
