700 grams Sweet cherry
100 grams sugar
1 Tbsp lemon juice
3 egg whites

Preparation steps

Rinse cherries, set aside 1 handful for garnish, remove pits and chop remaining. Add cherries to a pot with sugar, lemon juice and 80 ml (approximately 3 ounces) of water and bring to a boil. Reduce heat and simmer for approximately 10 minutes and pour through a sieve and let reserved juice cool completely.

Beat egg whites in a bowl until stiff and mix with cherry juice. Pour cherry sorbet into a shallow metal tray, cover and place in the freezer for at least 3 hours. Stir every 30 minutes with a fork to prevent the formation of large crystals.

To serve, scoop balls of sorbet into glasses and serve garnished with the reserved cherries.
