- 1 fresh lemon
- 80 grams sugar
- 250 milliliters Cabbage
- 50 milliliters kirsch
- 1 egg white
- 100 grams Crème fraiche
- 100 grams Yogurt (0.1% fat)
- 1 tsp ginger (freshly grated)
- 1 Tbsp powdered sugar
- mint (for garnishing)

Preparation steps
1.
Rinse lemon with hot water, grate zest and squeeze juice. Combine lemon zest, sugar, cherry juice and liqueur. Bring to a boil, stirring. Cool and strain through a sieve. Beat egg white until stiff and stir into mixture.

Place mixture into an ice cream machine and prepare per instructions. Otherwise, pour into a shallow metal bowl and freeze for about 4 hours in the freezer, stirrng occasionally.

Combine creme fraiche with ginger, powdered sugar and yogurt to make a sauce. Top cherry sorbet with a scoop of creme fraiche sauce and garnish with mint. Serve.
