Preparation steps

1.

Rinse oranges and lemons in hot water, cut off ends, cut into slices. In a saucepan, cover with cold water, bring to a boil. Remove the slices with the slotted spoon and mix 0.5 liter (approximately 2 cups) cooking liquid with the sugar. Simmer for 10 minutes until the syrup is stringy. Then leave to cool.

Strain the fruit in a colander then put in a heat-resistant vessel. Pour the syrup over and leave for 24 hours.

Then pour off the syrup and bring to a boil again, and again cool and pour over the slices. Infuse further 24 hours.

4.

Repeat the procedure 2 times.

5.

Take the fruit slices from the syrup and drain and dry on a wire rack with a baking tray underneath.
