Marinated Lemon Slices
Rinse the lemons and pat dry. Cut the lemons into thin slices (this is best done using a mandoline).
Remove the leaves from the rosemary, then finely chop. Mix the olive oil with the rosemary, pepper, and 1/2 teaspoon of salt. Pour the oil mixture over the lemons, then let marinate in the refrigerator for 1 hour.
Serve the marinated lemon slices garnished with the cilantro.
