400 grams Pastry flour
½ cube Yeast (21 grams)
1 pinch sugar
1 tsp salt
2 Tbsps olive oil
1 handful freshly chopped Fresh herbs (thyme, parsley and rosemary)

Preparation steps

Sift the flour into a bowl and make a well in the middle. Crumble the yeast into 3-4 tablespoons of lukewarm water. Add the sugar and cover. Let the yeast sit for about 30 minutes. Mix the oil, herbs, salt with the flour and yeast, and about 150 ml (approximately 2/3 cup) of water into a smooth and firm dough.

Cover the dough and let rest for about 30 minutes. Cut into 12 pieces.

Roll each piece out to 20 cm (approximately 8 inches) long.

At the end of a long stick, wrap the last 25 cm (approximately 10 inches) with aluminum foil. Wrap the dough around the end of the stick.

Bake over an open fire on the hot embers, constantly turning, until golden brown, about 15 minutes.
