½ bunch scallions
1 bunch Watercress
1 pink Grapefruit
1 Avocado
100 grams Yogurt (0.1% fat)
2 Tbsps lemon juice
½ tsp finely grated Lemon peel
1 Tbsp finely chopped parsley
salt
Tabasco sauce

Preparation steps

1.

Divide lettuce into leaves, rinse, trim, spin-dry and tear into bite-sized pieces. Rinse scallions, trim and cut into thin rings. Rinse watercress, trim, shake dry and also tear into small pieces as required, taking care to remove tough stems.

2.

Peel grapefruit with a sharp knife and carefully remove white skin. Cut grapefruit segments from membranes, collect resulting juices and mix juice in a bowl with grapefruit segments.

For the dressing, cut avocado in half, remove pit, loosen avocado from shell and mash in a bowl finely with a fork.

4.

Mix avocado in a bowl with yogurt, lemon juice and lemon zest, mix well and season with salt and a few drops of Tabasco. Add parsley and mix.

5.

Arrange prepared salad ingredients on plates, drizzle with avocado mixture and serve.
