- For the salad
- 4 bunches scallions
- 4 large Tomatoes
- 4 Tbsps olive oil
- 2 Tbsps butter
- 2 tsps sugar
- 2 Tbsps balsamic vinegar (bianco)
- salt
- peppers
- To serve
- 4 Tbsps Kidney Bean Salad
- 4 bunches Basil
- 12 slices ham (uncured, smoked, such as Parma ham)

Preparation steps
1.
For the salad, remove the roots from the scallions. Sauté the scallions in some butter, add 3 tablespoons of water and cook for about 5 minutes until the water has evaporated. Shower them with sugar and allow to caramelize, then deglaze with the balsamic vinegar.
Blanch the tomatoes for a few seconds, rinse cold, peel, quarter, remove the cores and cut into cubes. Season the tomatoes with salt and pepper and mix with the olive oil.

To serve, rinse the basil and shake dry.
Arrange the scallions and tomatoes on plates and serve garnished with three slices of ham, the basil and the kidney beans.
