- 2 cloves garlic cloves
- 2 Anchovy
- 1 sprig rosemary (needles removed)
- 3 Tbsps olive oil
- 12 Squid (approx. 120 g each, ready-to-cook, tentacles removed and chopped)
- 2 Tbsps breadcrumbs
- 1 Red onion (diced)
- 2 Tbsps fresh cilantro (chopped)
- 2 Tomatoes (peeled and diced)
- 1 Tbsp lemon juice

Preparation steps
1.
Place the garlic and anchovies in a mortar with the rosemary and 2 tbsp oil. Grind finely and then mix with the tentacles and the bread crumbs. Add the onion, coriander and the tomatoes and season with lemon juice, salt and ground black pepper.

Transfer the mixture in the the squid tubes and secure with toothpicks. Oil a barbecue or a grill pan and grill for around 5-6 minutes turning regularly. Arrange on plates, season with salt and ground black pepper and serve.
