4 large Chinese cabbage

½ Red Bell pepper
1 scallion
80 grams unsalted Peanuts
2 Chicken breasts each about 150 grams (approximately 5 ounces)
1 egg white
1 Tbsp light soy sauce
1 Tbsp Peanut butter
1 Tbsp freshly chopped ginger
Chili powder
1 Red onion
2 Tbsps Red wine vinegar
1 Tbsp lemon juice
2 Tbsps Peanut oil
1 Tbsp olive oil
1 tsp honey
60 grams lamb's lettuce

Preparation steps

1.

Rinse cabbage leaves and blanch for about 30 seconds in boiling, salted water, drain and rinse with cold water and drain and pat dry. 

2.

Rinse peppers, drain and pat dry and cut out stem and seeds and ribs and dice finely. Rinse scallion, drain and pat dry and cut into small rings. Chop nuts.

3.

Pat chicken dry and finely chop (or use meat claws to finely shred). Mix with nuts, scallion, egg, pepper, soy sauce, peanut butter and ginger. Season with salt and chile powder.

Depending on leaf size, place about 2 tablespoons meat mixture in center of each cabbage leaf. Roll up around filling and secure with toothpicks.

5.

Place packets side by side in a strainer and cover and steam for about 15 minutes.

6.

Peel onion and finely chop. Mix onion, vinegar, lemon juice, oil, and honey and season with salt and pepper.

7.

Rinse lettuce and spin dry and arrange on four plates. Drizzle with dressing. Remove cabbage packet from steamer and cut in half and arrange on lettuce.
