- 3 Chicken breasts
- ½ bunch cilantro
- 1 egg
- breadcrumbs
- salt
- freshly ground peppers
- Oil (for frying)
- 1 cup Lettuce
- 1 ½ ozs Cucumber (sliced into ribbons)
- 4 Hamburger bun
- Sauce
- ¼ cup Peanut butter (smooth)
- ⅛ cup Coconut milk
- ⅛ cup vegetable stock
- light soy sauce
- 1 tsp Oyster sauce
- salt
- Chili powder (hot)

Preparation steps
1.
For the satay sauce, put all the sauce ingredients into a pan, mix well and heat slowly. Simmer gently for about 5 minutes. Add soy sauce to taste.

Wash, dry and mince the chicken breasts.

Wash, dry and finely chop the coriander. Mix with the chicken and egg and add sufficient breadcrumbs to produce a shapeable mixture. Season with salt and pepper. Shape into four burgers and fry in oil for about 2 minutes each side. Drain on kitchen roll.

Split the buns.

Wash the lettuce. Cover the bottom half of each bun with lettuce and cucumber and place a burger on top. Add a spoonful of satay sauce and replace the top half of the bun. Hand the rest of the sauce separately and serve.
