May substitute the Peanut Dipping Sauce for your favorite. Sweet Chili Sauce works well.
Preparation steps
1.
Stir the first six ingredients together in a large bowl.
2.
Rinse the chicken under cold running water and pat completely dry with paper towels. Slice the chicken into approximately 24 (1/2-inch) strips and add to the marinade mixture.
3.
While the chicken marinates, prepare the peanut sauce by placing the milk, chili flakes, caraway, ginger, coriander, garlic and salt in a small saucepan and bring to a boil. As soon as it boils, take it off the heat and let sit for 15 minutes.
4.
Stir the peanut butter into the milk mixture; place over medium heat and simmer until the sauce thickens slightly, about 5 minutes or so.
5.
Preheat grill for high heat and lightly oil grate. Thread the meat onto skewers. Add pepper, to taste. Grill chicken for 2 to 3 minutes on each side, or until cooked through. Serve with dipping sauce.
